Four Things & Moroccan Recipe #978

A while ago, the lovely Jess tagged  me to do a fun little survey. Being the space cadet I am, I’ve been forgetting and forgetting! I only have one quick recipe to share tonight though, so there’s no better night to remember what I’ve been meaning to do:

1. Four TV shows that I watch

  • Bruins hockey
  • the morning news
  • Two and a Half Men
  • random Food Network shows when I’m bored/need background noise/etc. Really, the only thing on TV that I dedicate myself to and set time aside for, is the Bruins.

2. Four things that I’m passionate about

  • Teddie/horses/animals in general
  • photography
  • foooooood – including but not limited to baking, cooking and eating
  • life

3. Four words/phrases I use a lot

  • “Hi!” or “Hello!”
  • “Hi, this is Jess at [my workplace] just calling you to let you know your order is done!”
  • “how was work?”
  • “what’s goin’ on?”

4. Four things I’ve learned in the past

  • Everything really does happen for a reason, even if it seems it’s unfair.
  • Getting frustrated or stressed gets you nowhere.
  • It doesn’t hurt to ask questions.
  • People have better things to worry about than the way you look/are dressed/how you did your hair.

5. Four places I would like to go

  • England
  • Colorado

  • Played with Teddie
  • Baked
  • twiddled my thumbs
  • ate a lot of food

  • Spring.
  • The cold being over with.
  • Setting up my desk tomorrow so I can finally use my computer without sitting on the floor.

  • snowdays
  • watching the pretty snow fall
  • …I’m a little bit bitter about how cold it is right now, so that’s all I’ve got.

Uhh, I think I’m a little late to the party on this one – who hasn’t done this?! If you’re raising your hand right now, I’m tagging you 🙂

And Yes, you read that right. I haven’t had a desk this entire time because the stupid winter delayed its delivery. I no longer have a butt and my knees are permanently deformed probably, too. Since I’m just using a little coffee table still, I’ve either been siting cross-legged/kneeling/leaning/whatever in attempts to try and be comfortable.

I’m whining about it. But whatever.

Since I love you guys, I’m not letting it negatively affect my sharing of recipes.

This is where some of you just roll your eyes in the back of your head because of the above fig picture, thinking to yourselves “JESS! We’re sick of all of your Moroccan dinner recipes involving cinnamon and dried fruit! Enough already!”

Well then. If you ask me, enough is never enough. I’ve been loving me some Moroccan tagine-esque dishes. What’s better than a spicy-sweet savory dish, marrying the spices of ginger, cinnamon and cumin with the sweetness of dried figs, raisins and fresh apple, pulled together with nutty bulgur wheat?

All I hear is silence. That’s right – there’s nothing better. Except maybe peanut butter and jam sandwiches, but that’s not a fair comparison because you can’t mess with that classic.

Anyways. This is enough for two-three servings. I had it for dinner last night, wrapped in collard green leaves, and for lunch today alongside a sweet potato.

Whether you eat it plain, stuff it in a collard wrap or pair it with another veg – it’s a winner.

Moroccan Bulgur Recipe #978

  • 1 c. cooked bulgur
  • 1/2 med. yellow onion, diced
  • 1 t. coconut oil
  • 1 clove garlic, mashed
  • 2 large white mushrooms, chopped (optional – I had two mushrooms in my fridge that needed using, but this could easily be omitted)
  • 3/4 t. ground cinnamon
  • 1/2 t. ground ginger
  • pinch of ground clove
  • 3/4 t. ground cumin
  • 1 med-large Granny Smith apple, chopped and tossed with a bit of lemon juice
  • 3 dried figs, chopped
  • 2 T. dried cranberries, chopped
  • 2 T. raisins
  • 1 c. cooked chickpeas
  • salt and pepper, to taste

In a medium pan over medium heat, heat the coconut oil. Add in the yellow onion and cook until soft, about 5-6 minutes. Add in the garlic and cook one more minute and then the mushrooms. Cook until tender. Add in the spices (you may need to add a tablespoon or two of water at this point) and combine. Stir in the dried fruits, apple, chickpeas and bulgur and combine well.

Serve either in collard green wraps, over a bed of spinach, or enjoy plain!

And now I’ve gotta fly because they’re replaying the B’s game from this afternoon, that I was only able to listen to while at work. It was a great game, though, and I’m so psyched I can actually watch it now!

  1. I loved this! I don’t watch sports on tv, but I like going to sporting events. The fig and apple here look so good! I would like to have eaten’ both and the final dish! Have a great night Jessica!

  2. That’s not a fair question. I have to say baseball, because it’s my favorite sport all-around… but I like watching all sports. Well, except basketball. I hate basketball for some reason.

  3. I truly hope I can make this sometime this week before I go back to school. I haven’t had the sweet and spicy combos like cinnamon, cumin and ginger in quite sometime and I’ve got figs and chickpeas on hand (I’ll have to sub for a McIntosh apple and some raisins for the cranberries but meh…)

    I’m not really a huge fan of watching sports, I’d rather attempt to play them, but I have gained a bit of interest in watching football just for the sake of hanging out with friends during games. I still don’t understand how people can watch NASCAR… but to each their own!

    Hmm I like to watch anything horsey, aaand that’s about it. I would love to get into basketball or ice hockey or baseball, but none of them are played here! The only stuff people like here is football and cricket and golf, and they’re all crap :/

    My favourite sport to play is badminton or netball but I’m not much of a sport watcher. I guess rugby? Or tennis? Meh. Cricket is my LEAST favourite to watch and then golf.

    I LOVE watching ice skating, gymnastics, and swimming (Olympics, duh). I hate watching anything football-y (you know what I’m talking about!). I am such a girl! Haha but literally I have fallen asleep while watching football, it’s awful.

    HOCKEY though, I can watch because I used to play field hockey and I was brutal, aka girls would get plowed over by me;)

    I too am looking forward to spring – I’ve had enou() snow for one winter already and it’s only JAnuary!!!
    Mynfavorite sport to watch in person would have to be either baseball in the summer (love sitting in the ballpark on a nice warm summer afternoon) or ice hockey – imonlynwqtch hockey though if I’m at a live game!!! So much more exciting to actually be at the game!!

  9. Favorite sport would have to be football, and it’s almost over 😦 Of course we do watch Nascar, but I can’t sit in front of the t.v. for the entire race…I have to move about and do other things as well. Now to go to a race, toatlly different story!

  11. I love all of your recipes. You are so creative in the kitchen! My favorite sport to watch would probably be football and anything horsey, especially jumping.

  12. Loved the 4 things. As simple as it seems, the “it’s ok to ask questions” is actaully a tough thing to do! I’m just now to the point of asking questions whenever I’m not entirely sure on something..and it’s helped a ton!! Saves a whole lotta confusion.

  15. Sweet, spicy and full of nutrition…what a great recipe. One of the places that I most want to visit is Morocco so I think that this dish should help alleviate at least a small bit of my longing.     The moroccan bulgur sounds wonderful! I used to eat bulgur all of the time, but have since forgotten to stock up my pantry. I need to get on that so I can make this reicpe. 😀

  19. I’m not really one for watching sports, but I did really get into watching the hockey games during the Olympics last winter. I loved cheering on my Canada boys! 😀

    Also I will never get sick of your Moroccan recipes. Grain dishes with dried fruit are where it’s at!

  21. Oooooh I made nearly exactly the same dish a couple of days ago! I absolutely loved it – moroccan is my second favourite to indian 🙂
    I rarely ever watch sport to be honest. But I do try to watch the winter olympics for the figure skating because it just looks beautiful..I would love to be able to skate like that.

  22. Ewwww sports on TV. Not a fan AT ALL, though if I HAD to choose I’d say figure skating. Such a girl. Oh, and the Eagles/Phillies when they’re in the finals of everything….then I can just go to a party and pretend to watch the game while really stuffing myself with chips and salsa 🙂
