Sometimes, I’m really oblivious to the world around me.

Other times, I’m really observant, and pick up on every little thing. My mom even tells me I read into body language and the like far too much. She’s usually right, but I’m not talking about body language right now.

I’m talking about oats.

I’ve noticed that the past three mornings I’ve had overnight oats, I seemed to enjoy them much more than usual.

And then I also noticed that I’d just started using quick oats for them instead of old fashioned due to my grocery shopping whoopsie.

Thus, I am drawing the conclusion that overnight oats are better with quick oats versus old fashioned.

Do you notice every little thing, or are you in your own little world the majority of the time?

There, I said it. Sue me, in all of my food-blogger glory. But I said it.

This morning’s bowl followed right in line with the past two by being simply ah-mazing. The same base as Wednesday except more quick oats in place of the Peppy Kernels. And a boatload of cinnamon.

I asked Mouse if he would share his hammock bed with me, and when he said no I told him I was going to paste this risque photo of him all over the web.

I messed around with the ponies here a bit before leaving. The daughter (long haird, I think we’re naming her Mia) is really quite a sweetheart. I think the mama will warm up soon – she’s friendly but she’d rather eat her hay then come up to you. Mia would stuff herself in your pocket if she could.

I also stopped to see my boy, leaving early enough to give myself time to take him for a walk rather than just graze. We have an outdoor at the barn, but it’s sort of secluded away from everything, which can be a bit nerve racking.

It’s also not fenced in yet, which is the main reason I haven’t ridden in it yet, but I wanted to get him used to being out there alone. He behaved himself quite well. I think he got a kick out of the fact that the grass bordering it was almost as tall as he was – it’s grown a lot from this photo, and hasn’t been hayed yet! I re-did his braids to keep him cool. He’s becoming so well-mannered lately, I’m impressed. And by golly, I think he likes seeing me πŸ˜‰

I was lazy taking pictures for work again since I’m trying to be faster in the a.m. but here’s a sneak peak:

I had a morning snack of a hardboiled egg – don’t know why I don’t do that more often. They make perfect snacks!

Lunch was another bulgur cold salad that I made yesterday. This one contained bulgur, basil, greek yogurt, cinnamon, nutmeg, apricot jam, chopped apricots, and pecans. I also added in some chickpeas for more oomph. I liked the flavors in this, but it was a bit dry – needed more dressing! I also had a red plum.

And the Snyder’s 8 grain pretzels ended up being saved for my afternoon snack.

Oh, and don’t forget about the iced coffee I splurged on again this week. Whoops. Hey, if my boss is sending me there while I’m out getting my bread, how on earth can I resist? I was out of cream or milk at work.

Speaking of bread, I was obviously chomping at the bit to get some of this delicious loaf in me. So, I went the easy road for dinner. A seitan sammie containing seitan, goat cheese, cranberry-orange-nut sauce, and lettuce. On toasted bread, but that really doesn’t matter because while the snap peas were microwaving I went outside to play with the ponies some more so it was cold by the time it was consumed anyways.

That guy knows how to make a loaf of bread.

Yowsa.

  1. I read a lot into things. I am not the most secure person, so I think I think about things too much. You are too cute with that pony of yours! It sounds like you had a pretty good day! I need to get on the overnight oats again. I am just loving the waffles now. Really, I blame you! We did ours a la mode with peanut butter granola today! Have a great night Jessica!

  2. I think I read into people very much, but am not very observational when it comes to my “other” surroundings (probably would explain my lack of sense of direction).

    You like the quick oats, huh? See, I’m just the opposite- I always bought quick oats until I accidently bought the old fashioned. Now I can’t go back…

    Perhaps quick oats are designed more to absorb liquid without so much help from heat? .. just a thought.

    I don’t blame you one bit for waiting to use the un-fenced outdoor ring. Even if he is behaving, that would be a pretty big step πŸ™‚

    After reading about your dinner, I feel the need to tell you that I often toast my bread for sandwiches and then purposely let it get cold. I like the crunch more than I like the warmth πŸ˜›

  6. Hmm I’ve never tried quick oats in my overnighters before! Good idea!! And I have recently re-discovered hard boiled eggs too. They are portable and full of protein! I suck at peeling them though haha

  8. I love hard-boiled eggs as snacks too, but I’m usually too “lazy” to make them, although technically they take a matter of 10-15 minutes on the stove.

  9. That’s really interesting about the overnight oats. I find I don’t always enjoy them as much as I would like to, but I’ve been using old fashioned oats, so maybe that’s why? I might just give it a shot with quick oats and see if that makes a difference. I don’t think anything can top steelies, though πŸ™‚ I’ve been cooking them with an egg white lately, and that makes them oh. so. good… ooey and gooey πŸ™‚

    I tend to be really sensitive to my surroundings most of the time, which is probably why I get overwhelmed so easily. I’ve read that some people are just naturally more sensitive to their surroundings because their brain doesn’t filter out all of the excess “noise”… It’s actually quite stressful, and sometimes I really wish I could be a little bit more oblivious!

    i must make overnight oats, gosh..can’t believe i have not yet this summer! last year i was obsessed! I’ll have to try with quick cooking oatmeal. Your creations and eats are so amazing, always sound and look delicious! that bulgur dish sounds SO good, love adding chickpeas + dried fruit, the apricot addition sounds great! I was thinking of having a hard boiled egg for a snack today! I should, ur so right. It’s like a perfect little snack πŸ™‚

  12. It is interesting because I too tend to be very observant in some things but can have moments where I am more oblivious as well. In college I took a travel writing course which really opened up my eyes while studying abroad in cafes, museums, etc. and sometimes I enjoy re-hashing those memories by simply soaking in the moment and observing all things around me. Other times though, I am extremely observant and food is usually one of those things…

    I can believe that the overnight oats are good with quick cook oats since they are simply steamed more than rolled oats. I am sure that means they could soak in and fluff up more. Another delicious day!

    I think I read into things a bit too much too – I know my mum says the same about me! And I can sense from a mile off if someone isn’t quite right (with me, the world, whatever)..it’s a bit annoying sometimes!

  15. I think the trick to having boiled eggs for a snack IS exactly not having it that often. Whenever I have a boiled egg I’m thinking yum! Let’s do that again! But if I have it everyday for a while, that kind of turns around into eggs…yuck, I need a break. πŸ™‚

  16. Sometimes when I’m caught up in my thoughts and daydreams I can be totally oblivious to the world. But I’m usually pretty good at reading people and tuning into their feelings.

    i think i’d have to say i live in my own little world. in a way, i’m totally oblivious to things happening around me, and wrap myself up in my little bubble and don’t let anyone else in, but then again, i do notice the tiny little things in life! i’m an odd case! ha xx

    You have given yet another inspiration for my love of bulgur..with jam! Genius girl!! I absolutely love it..I have it everyday but I just have it plain with veggies in on the side soo now I have an idea to make it exciting yaaay!
    And the bread does look simply yum, there is nothing better than a good bit of hearty toasted bread, and the smell…ahhh nothing beats it!

  22. I’m definitely the space out type – not as observational as I should be. My husband is always trying to read my body language and tone and he is almost always wrong! Seriously. I guess there is such a thing as overly observational.

  23. alright – i have a question for you. but it’s a question that lets you in on a little bit of my food-freakiness… ok?

    does it bug you… that seitan sandwiches… are bread sandwiches?!?!?

    haha i don’t have any “food rules,” or “fear” foods, or anything like that, but i CANNOT make a seitan sandwich! lol i just feel like i’m eating the whole darn loaf of bread, since seitans wheat and everything. i’m a goober!

  24. Two things that you did to your meals that I love, and had never thought of before. One – you added apricot jam to that salad, which is such a good way to add some sweetness. (And I just love apricot jam. It’s too often overlooked.) Two – that you made a sandwich with seitan.
